Can I use one API key on multiple sites?

Yes. Your master key and your sub-keys both work on as many WordPress sites as you like, just paste the same key into the plugin on each one. The only exception is a sub-key you have restricted by domain, which works only on the domains you allow.
They share one pool of credits
Your image credits are counted per account, not per site. Every site that uses a key draws on the same monthly allowance, so two busy sites use up your credits faster than one. For how the allowance is counted, see How is my quota counted?.
When you might want separate keys
If you manage several sites or clients and want to track or cap them separately, you can issue sub-keys from the API keys page, one per site, each with its own optional monthly credit cap and domain restriction. Sub-keys are an Unlimited-plan feature. See What are sub-keys and how do I create them?.
To lock a key to the sites it is allowed to run on, use domain controls.
